Hemp leaf and quinoa salad recipe


  • 1 cup quinoa
  • 2 cups fresh hemp leaves, washed and chopped
  • 1 pepper (color of your choice), diced
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to taste

  1. Cooking Quinoa : Rinse quinoa under cold water to remove the natural coating. In a saucepan, bring 2 cups water to a boil, add quinoa, reduce heat, cover, and simmer until quinoa is tender and water has been absorbed, about 15 minutes. Set aside to cool.

  2. Prepare the vegetables : While the quinoa is cooling, cut the peppers, cucumber and tomatoes into small cubes.
